Sườn heo được rửa sạch và ngâm trong nước lạnh để loại bỏ máu sườn. Chặt nhỏ sườn, ướp cùng gừng lát, hành lá thái nhỏ, dầu hào, nước tương, muối, rượu vang.
Cho hạt kê vào chảo rang vàng thơm cùng hoa hồi, ớt khô, hoa tiêu. Sau đó, đổ hạt kê rang vào tô sườn, trộn đều.
