Cá kho dứa rất dễ ăn với vị đậm đà, chua ngọt vừa phải, cá chắc thịt và thấm gia vị. Còn dứa là điểm nhấn giúp món ăn trở nên ngon miệng, ngon mắt hơn.
Các nguyên liệu, rau củ rửa sạch. Cá nếu nhỏ để nguyên khoanh, nếu to cắt khoanh cá làm 4, dày khoảng 2cm. Cà chua và hành tây bổ múi cau. Dứa thái miếng vừa ăn.
Cắt lấy phần đầu hành lá, đập dập. Cá ướp với 2 muỗng canh mắm ngon, chút ớt bằm (tùy thích) và 1 muỗng cafe hạt nêm trong khoảng 15 - 30 phút cho thấm.
Làm nóng dầu trong nồi, cho phần đầu hành vào đảo cho thơm. Sau đó thêm dứa và cà chua vào đảo chín mềm thì bắc xuống.
Cho cá vào một nồi khác, thêm hành tây. Trút nồi cà chua và dứa xào vào chung với nồi cá, bật bếp đun lửa vừa.
Trong quá trình đun cầm quai nồi xóc nhẹ, không dùng đũa đảo vì có thể làm nát cá. Khi cá chín tái thì bạn thêm nước xâm xấp nồi cá và đun sôi, sau đó bớt lửa đun tiếp tới khi nước cạn 1/2 thì bạn nêm nếm lại cho vừa miệng.
Đun đến khi cạn nước thì tắt bếp, lấy cá và dứa ra đĩa, ăn với cơm trắng. Nếu không tìm được cá ngừ đại dương thì cá thu cũng là một lựa chọn thay thế rất ổn. Chúc bạn thành công và ngon miệng với món cá kho dứa này nhé!
